Preparation
1 cup Pancake mix
274ml Milk
2 Eggs
Servings: 8 to 10 pancakes
In a bowl, put the eggs and half the milk, whisk together. Add the pancake mix and stir until combined. Add the rest of the milk and stir. Let the mixture sit in the refrigerator for 30 minutes. In a frying pan over medium heat, add a generous amount of vegetable oil to cover the entire surface. Pour a ladleful of the mixture into the center of the pan to form a pancake approximately 9 cm in diameter. Using a spoon, drizzle the pancake with hot oil. When the bottom of the pancake is golden brown, turn it over. When both surfaces are golden brown, the pancake is ready. Add oil if needed between each pancakes.
