Our generous roasted pork rack is prepared with garlic, rosemary, and other aromatic herbs for a comforting, flavorful taste. Served with a velvety sauce made from meat glaze, apple cider, and cherries, it perfectly balances sweet and savory notes for a festive meal full of character.

Keep refrigerated. To be savoured within 5 days after receiving your order. Cannot be frozen.
Preparation method
Preheat the oven to 425°F (220°C).
Prepare the roast: Carefully open the bag with scissors, remove the pork rack, then remove and discard the paper covering the bones.
Sear the meat: Lightly oil a large oven-safe skillet. Place the roast in it, fat side up. Bake for 30 minutes.
Add the sauce: Reduce the oven temperature to 375°F (190°C). Remove the skillet, pour the sauce over the roast and into the pan, then return it to the oven for 15 minutes.
Basting: Take the roast out again, baste it with the sauce, then return it to the oven for another 15 minutes.
Finish cooking: The internal temperature should reach about 60°C (140°F) or feel warm when you insert the tip of a knife. If not, continue cooking for a few more minutes. Then remove the roast and let it rest on a plate.
Reduce the sauce: Place the skillet on the stovetop over medium heat and reduce the sauce until it coats the back of a spoon. If it becomes too thick, add a little water to adjust.
To serve: Cut the roast into 4 nice slices by cutting between the bones. Place them on a plate and generously spoon the cherry sauce over top.
